Tasting Culinary Tours

A boutique winery in Paşaköy village (Ayvacık, Çanakkale) on the ancient Assos coast, producing wine since 2012. The project is a partnership between Ayşe & José Medran and Saffet Karpat, and now also hosts the Salt & Oak / V'Asbos Kitchen restaurant.

The vineyards lie on northern Aegean slopes draped in garrigue — wild thyme, lavender, rosemary — whose imprint shows in the wines as herbal and spice notes. The estate looks out across the strait toward Lesbos.

Winemaking aims to "let the vineyard speak" rather than impose flavour, using the most natural methods possible.

Underneath the estate, an 18-metre-deep cellar reaches through a 3 km tunnel cut into the rock — naturally cool, no climate control needed. The on-site Salt & Oak / V'Asbos Kitchen restaurant pairs estate wines with carefully prepared regional cuisine.
