Tasting Culinary Tours Indigenous grapes
A family-run vineyard and winery in Havsa, Edirne, founded in 2007 by the Öktem family. The first vintage was bottled in 2010; annual capacity has since grown to roughly two million litres.
The estate sits inland in Thrace, close to the Bulgarian border. Cool nights and a long summer of sunshine in the Edirne plain let the grapes mature with their acidity intact.
Edrine's flagship is the indigenous Papazkarası — the estate is one of the producers actively reviving this once-lost Thracian variety on its native ground. The vineyard is also planted to Cabernet Sauvignon, Merlot, Syrah, Chardonnay and Sauvignon Blanc.
Guided tastings cover the full six-wine range, sampled both formally and direct from the steel tanks. The on-site restaurant serves house-made sucuk and other local pairings; weather permitting, tastings continue out on the vineyard terrace. The house style favours minimal oak — the "naked" grape comes through.
