Papazkarası is an indigenous black grape from Thrace whose name — literally "the priest's black" — is traced to records of Greek village priests who tended early plantings during the Ottoman period. Traditionally grown across the plateaus of Tekirdağ and Kırklareli, it has been brought back into focus by Thracian boutique producers.
The grape has thin skins and demands attention in the vineyard, thriving on cool nights and the elevation of Thrace's hill country.
Growing conditions
