About this grape
Çavuş is a white grape native to the island of Bozcaada — both a traditional table grape and one of the four principal indigenous varieties of the island's viticulture (alongside Vasilaki, Karalahna, and Karasakız).
It thrives in the island's windy, salt-laced sea air and on its calcareous alluvial soils, retaining character even at low elevation.
Growing conditions
Medium acidity, gently aromatic, with fresh fruit character. Demands careful harvest timing — over-ripening leads to acid loss. Also valued as a table grape on the island.
